About the Role

The Venue

Merivale is redefining event dining at scale across Sydney’s most iconic stadiums — the SCG and Allianz Stadium (SFS). From major sporting fixtures to sell-out international concerts, our Stadiums Events team delivers high-volume hospitality with the same quality, precision and creativity found across our restaurants.

 

You’ll be working from brand-new kitchens with premium equipment, delivering food across multiple concepts and service formats. Backed by the scale, structure and depth of the Merivale group — and led by some of the industry’s most respected chefs — this is events cooking with real support, clear systems and genuine career progression.

 

The Role

We are currently seeking Junior and Senior Sous for this team.  As Sous Chef, you’ll be a key leader within the Stadiums Events kitchen team. Reporting into the Sous and Head Chefs, you’ll help drive execution across busy event services, lead large teams through peak trade, and ensure quality, consistency and pace at scale.

 

This role suits a confident CDP or Junior Sous ready to step up in a high-energy, high-pressure environment. You’ll gain exposure to large-scale operations, complex service planning and multi-venue collaboration, while working across a variety of cuisines, menus and food spaces within the stadiums.

 

You will:

  • Lead sections and services during major events and game days
  • Support senior chefs with prep planning, stock control and kitchen operations
  • Coach and develop CDPs and junior chefs, leading from the front
  • Maintain Merivale standards across food quality, safety and consistency
  • Thrive in fast-paced, high-volume service while staying organised and calm

This is a hands-on leadership role for a chef who wants their work seen by thousands, their skills challenged daily, and their career accelerated within a large, respected hospitality group.
