Job Description

The Chinese Cook is responsible for preparing, cooking, and presenting authentic Chinese cuisine according to hotel standards while maintaining food quality, hygiene, and consistency. The role supports the daily operations of the kitchen and ensures guest satisfaction through excellent food preparation and service.

Key Responsibilities

  • Prepare and cook Chinese dishes according to approved recipes and hotel standards.
  • Ensure food quality, taste, presentation, and portion control are consistently maintained.
  • Prepare ingredients, sauces, stocks, and mise en place for daily operations.
  • Operate kitchen equipment safely and efficiently, including wok stations and cooking appliances.
  • Maintain cleanliness and organization of the assigned kitchen section.
  • Monitor food stock levels and report shortages to the Chef de Partie or Sous Chef.
  • Ensure proper storage, labeling, and rotation of food products following FIFO procedures.
  • Comply with HACCP, food safety, and hygiene regulations at all times.
  • Minimize food waste and support cost-control initiatives.
  • Assist in menu development and the introduction of new Chinese dishes when required.
  • Support banquet, buffet, à la carte, and special event operations.
  • Work closely with the kitchen team to ensure smooth service during peak periods.

 

Qualifications

  • Minimum Diploma or Vocational Certificate in Culinary Arts, Hospitality, or related field.
  • Minimum 5 years of experience as a Chinese Cook or similar role in a hotel, restaurant, or Chinese specialty restaurant.
  • Strong knowledge of Chinese cooking techniques, ingredients, sauces, and food preparation methods.
  • Familiar with wok cooking techniques, Chinese sauces, soups, and stir-fried dishes.
  • Good knife skills and food preparation.
  • Understanding of food presentation and portion control.
  • Good understanding of food safety, sanitation, and HACCP standards.
  • Experience in wok cooking, dim sum preparation, roasting, steaming, and stir-frying is an advantage.
  • Ability to work in a fast-paced environment and under pressure.
  • Strong teamwork and communication skills.
  • Flexible to work shifts, weekends, and public holidays.
  • Physically fit and able to stand for extended periods.
