Gravity Haus is seeking an energetic, hands-on Director of Food & Beverage to oversee all Gravity Haus Operations at Gravity Haus Breckenridge which currently includes: Cabin Juice & Unravel Coffee. This position will have full ownership of all Food & Beverage operations, financials, and employees. This role is responsible for delivering exceptional service, building a high-performing team, and driving strong financial and operational results. The ideal candidate maintains a positive attitude and is driven to provide outstanding customer experiences.
The Director of Food & Beverage must have a lead by example approach and be a team player in every sense of the word. Key Responsibilities
- Partner closely with the Hotel General Manager to execute the company’s vision, mission, and operational goals for all Food & Beverage outlets.
- Lead and develop the Food & Beverage team, including the Executive Chef and F&B managers, fostering a culture of accountability, collaboration, and exceptional service.
- Oversee the financial performance of all F&B operations, including budgeting, forecasting, cost control, labor management, and revenue growth through marketing, events, and promotions.
- Manage and administer the annual departmental budget, monitoring expenses, invoices, and operational costs to ensure fiscal responsibility.
- Recruit, hire, schedule, and develop team members to ensure appropriate staffing levels year-round, while maintaining strong training and onboarding programs for new hires.
- Provide ongoing coaching, feedback, and performance management, documenting development conversations in alignment with People & Culture protocols.
- Lead daily pre-shift meetings and operational communications to reinforce service standards, training initiatives, member events, and key updates.
- Ensure efficient reservation management and guest flow, maximizing covers while maintaining high service and culinary standards.
- Champion the member and guest experience, ensuring Gravity Haus members are recognized and that service consistently exceeds expectations.
- Collaborate with the Private Events Manager to develop and execute a successful private events program that maximizes use of F&B spaces across all dayparts.
- Partner with the Membership team to plan and host engaging member and community events that strengthen the Gravity Haus community.
- Maintain comprehensive training and development programs that support operational excellence and professional growth for the F&B team.
- Monitor guest feedback and online reviews, leading the team in continuous improvements to service quality and overall guest satisfaction.
- Evaluate the performance of menus, promotions, and events, making data-informed adjustments to optimize profitability and guest experience.
- Ensure compliance with all Haus Operating Procedures (HOPs) and applicable laws, while contributing feedback to evolve operational best practices.
- Administer bi-weekly payroll processes, ensuring accurate timekeeping, wage payments, and compliance with company policies.
- Foster innovation and create memorable food and beverage experiences that drive guest satisfaction and business performance.
What We’re Looking For
- 7–10+ years of progressive Food & Beverage leadership experience, including management of high-volume restaurant or hospitality operations. Prior experience as a Director, General Manager, or multi-outlet leader strongly preferred.
- A resourceful, self-motivated leader who can align team culture, service standards, and operational execution with the company’s broader strategic vision.
- Demonstrated success leading and developing large teams, including hiring, training, coaching, and empowering managers and frontline staff to grow and perform at a high level.
- Strong emotional intelligence and interpersonal skills, with the ability to build trust and maintain productive relationships with team members, guests, ownership, and cross-functional leaders.
- Proven financial acumen in food & beverage operations, including the ability to read and interpret financial statements, manage budgets, forecast revenue and expenses, and communicate financial goals across the team.
- Experience operating in a high-volume environment, with the ability to balance exceptional guest experiences while maintaining tight control of labor, cost of goods, and operational expenses.
- A strategic mindset with the ability to anticipate operational challenges, identify opportunities for improvement, and implement systems that support long-term success and scalability.
- Strong organizational and communication skills, with the ability to manage multiple priorities while ensuring daily, weekly, and monthly operational deliverables are consistently met.
- Solid understanding of restaurant marketing, promotions, and guest engagement strategies that drive traffic, revenue, and brand awareness.
- Deep knowledge of state health regulations, food safety practices, and liquor laws, with a strong commitment to operational compliance and best practices.
- Exceptional guest service instincts, with the ability to model and train teams to deliver memorable hospitality experiences.
- A hands-on leadership style with a strong sense of ownership, willing to step into operational gaps, solve problems, and build infrastructure that strengthens the business over time.
- Excellent written and verbal communication skills.
Physical Requirements
- Ability to stand and work on feet for extended periods.
- Ability to lift and carry up to 50 lbs.
- Flexibility to work varied shifts, including nights, weekends, and holidays.
