The Gibbet Hill Grill is at the forefront of the local food movement. We are one of the only restaurants in New England that has a produce farm on site, and our chef shapes the menu around what is seasonally available. In the summer, the majority of our produce is grown right on our farm. We grow over 40 varieties of heirloom tomatoes, squashes and zucchini, heirloom beets, radishes, greens, peppers, beans, potatoes, specialty onions, herbs, and many other crops, all of which can be seen on our menu throughout the year. We keep a root cellar and have winter greenhouses in order to expand our growing season. In addition, we also source from other local farms and food purveyors to feature the best of what the region has to offer. We bring the farm to your fork, literally.
The roots of this restaurant are in farming. Before the Grill existed, Gibbet Hill Farm was a working Black Angus cattle farm. When we set out to build a restaurant on this land, we wanted to preserve the important history of the farm. Renovating the 100-year old post-and-beam cattle barn for our restaurant was the first step. We kept the energy and spirit of the barn intact, while providing an elegant, beautiful space to dine and socialize.
About the Role
Description
The Position:
Gibbet Hill is seeking a skilled an experienced Prep Cook to join our restaurant team. As a Prep Cook, you will be responsible for preparing and cooking ingredients, as well as assisting with food production and maintaining a clean and organized kitchen. The Prep position is daytime hours, primarily 8am-4pm, with shifts available weekdays and weekends.
Responsibilities:
- Assist in the preparation of ingredients for dishes, including cutting, chopping, and measuring ingredients
- Follow recipes and directions provided by the head chef to ensure that all dishes are prepared consistently and to high quality standards
- Work with other kitchen staff members to ensure that all elements of the meal, including sides and sauces, are prepared in a timely manner
- Ensure that all food is prepared and presented in accordance with food safety and sanitation guidelines
- Maintain a clean and organized kitchen area, including proper storage and labeling of all food items
- Assist in the cleaning and maintenance of all kitchen equipment, including knives, cutting boards, and food processors
- Ensure that all food waste is minimized and disposed of properly
Requirements:
- Prior relevant experience as a prep cook or similar role preferred.
- Must be able to stand for extended periods of time and lift 50 lbs. continuously
- Strong knife skills and ability to work efficiently with kitchen equipment.
- Strong communication skills, ability to follow direction and ability to work in a fast-paced team environment.
- Willingness to work flexible hours, including evenings, weekends, and holidays.
