What You’ll Do
As a Sushi Chef at Bamboo Sushi, you’ll work closely with both our kitchen and front-of-house teams to ensure consistent, thoughtful, and timely preparation of sushi bar menu items. You’ll be hands-on in every aspect of sushi production, from prep to guest interaction, while upholding our high standards of quality and hospitality.
You’ll progress through our sushi stations based on skill level and experience:
- Roll Case – Vegetable prep, sushi rice preparation, and mastering roll production
- Front Case – Fish breakdown, knife work, nigiri and sashimi preparation, creating omakase experiences, and engaging with guests at the sushi bar
- Wheel – Coordinating incoming orders with production while preparing rolls, nigiri, and sashimi

What You Bring
- Commitment to food safety, sanitation, and company standards
- Ability to maintain clean, organized, and efficient workstations
- Passion for continued education in Japanese cuisine and beverages
- Strong collaboration with BOH and FOH teams
- Knowledge of proper food and product handling and storage
Preferred Experience:
- 1+ year in a high-volume and/or guest-facing food service environment
- Sushi Chefs: 1–2 years of culinary experience or formal culinary education

Physical & Environment Expectations
This role is performed in an active restaurant environment and may include:
- Moving throughout the restaurant to access equipment and ingredients
- Operating standard kitchen and restaurant equipment

- Distinguishing flavors and maintaining attention to detail
