About the Role

The backbone of the back.

A great kitchen cannot run without a great Steward.

We’re opening new NALA stores in Dubai, and we’re looking for hardworking, reliable and detail-focused people to join our Back of House team.

As a Steward, you’ll keep the kitchen moving by keeping it clean, supplied, safe and ready for service. Your work happens behind the scenes, but it has a direct impact on every guest experience.

There are no shortcuts. No drama. Just pride, discipline and a commitment to getting the small things right — every shift.

Your Mission

Even when guests may never see you, everything you do supports their experience.

Clean equipment means the kitchen can move.
Clear floors mean the team can work safely.
A stocked station means service can run smoothly.
A clean, organised kitchen means everyone can do their best work.

You’ll also be fully cross-trained across the store. Every team member is expected to be trained, signed off and confident across both Front and Back of House. We work as one team and step in wherever we are needed.

What You’ll Be Responsible For

Warewashing & Equipment

  • Wash, rinse and sanitise dishes, pots, utensils and equipment continuously throughout the shift.

  • Operate the dishwasher at the correct temperature and chemical dosage.

  • Check and verify chemical levels at the start of every shift.

  • Follow the three-sink method exactly.

  • Clean equipment thoroughly, both inside and out.

  • Ensure nothing returns to service until it is properly clean and sanitised.

Waste & Refuse

  • Empty bins before they reach capacity.

  • Separate food waste, recycling and general refuse correctly.

  • Replace bin liners immediately after emptying.

  • Clean and deodorise bin areas daily.

  • Check and report grease traps according to the scheduled cycle.

  • Keep waste areas clean, organised and ready for inspection.

Kitchen Support

  • Proactively restock clean equipment, utensils and supplies to the kitchen line.

  • Make sure the kitchen team has what they need before they need it.

  • Sweep and mop floors every 30 minutes, or immediately following any spill.

  • Clear drains at the end of service.

  • Report broken, damaged or leaking equipment to the Supervisor immediately.

  • Support the kitchen team wherever needed to keep service moving.

Setup & Cleanliness

  • Keep floors, stations and back-of-house areas clean and organised throughout the shift.

  • Ensure the kitchen is properly set up and ready for service.

  • Maintain cleanliness continuously — not just at the end of the day.

  • Keep equipment, storage and work areas looking and operating to NALA standard.

  • Complete the full end-of-shift clean before signing off.

Chemical Safety

  • Store all chemicals in correctly labelled containers.

  • Keep chemicals separate from and below food and food-contact areas.

  • Follow the correct dilution ratios at all times.

  • Wear the required PPE when handling chemicals.

  • Never mix chemicals.

  • Ask the Supervisor whenever you are unsure about the safe use of a chemical.

Personal Hygiene & Conduct

  • Wear the full NALA uniform and maintain high personal presentation standards.

  • Wash hands thoroughly after handling waste, chemicals or refuse.

  • Do not handle food unless specifically directed.

  • Report any illness, cuts or skin conditions to your Supervisor before starting your shift.

  • Follow all hygiene, safety and conduct standards throughout the working day.

Dubai Standards & Compliance

Cleanliness, hygiene and safety are fundamental to the role and are non-negotiable.

You will be required to:

  • Hold a valid Occupational Health Card.

  • Follow the Dubai Municipality Food Code for hygiene and cleaning.

  • Use only approved cleaning chemicals and follow the required standards.

  • Manage waste and grease traps through approved Dubai Municipality contractors and scheduled processes.

  • Support pest-prevention standards by keeping all areas clean, sealed and inspection-ready.

  • Maintain all required in-house and food-related certifications.
