About the Role

Where great hospitality begins.

We’re opening new NALA stores in Dubai, and we’re looking for passionate, hardworking and detail-focused people to join our Back of House team.

The kitchen is where our standards come to life. Every ingredient you prep, every portion you produce and every plate or product that leaves your station has a direct impact on the guest experience.

Your Mission

Put the guest first. Always.

Even when you’re behind the scenes, everything you do is ultimately for the guest.

You’ll help create the food and products that define the NALA experience, while keeping our kitchen safe, clean, organised and ready for service.

You’ll also be fully cross-trained across the store. Every team member is expected to be trained, signed off and confident across both Front and Back of House. We believe strong teams understand the whole operation and step in wherever they are needed.

What You’ll Be Responsible For

Prep & Production

  • Complete all required preparation before doors open and service begins.

  • Follow recipes and production methods exactly — no guessing or improvising.

  • Weigh and portion ingredients accurately to NALA standards.

  • Record batch sizes and communicate any adjustments to your Supervisor.

  • Monitor stock levels and flag low or missing items immediately.

  • Produce food consistently, with care and attention to quality, presentation and specification.

Storage & Food Organisation

  • Follow the correct fridge hierarchy, keeping ready-to-eat foods above raw products.

  • Label all ready-to-eat and prepared items immediately with the product name, preparation date, use-by date and initials.

  • Follow FIFO at all times.

  • Never store chemicals near food or food-contact areas.

  • Keep storage areas organised, clean and easy to check.

  • If it isn’t labelled correctly, it doesn’t go into the fridge.

Hygiene & Food Safety

  • Maintain a clean and safe kitchen throughout every service.

  • Clean floors every 10 minutes during service.

  • Wipe and reset your station as you work — don’t wait until the end of the shift.

  • Set up and verify the three-sink system and dishwasher at opening.

  • Monitor and record TCS food temperatures throughout the full chain of custody.

  • Complete the full end-of-shift cleaning process before signing off.

  • Follow all food safety, hygiene and HACCP requirements without exception.

Station & Grab-and-Go Standards

  • Set up your station correctly and ensure it is fully ready before service.

  • Keep your station clean, stocked and organised throughout the shift.

  • Replenish grab-and-go products to NALA specification.

  • Ensure grab-and-go items are presented neatly and consistently.

  • Communicate immediately when stock, equipment or production may affect service.

Dubai Standards & Compliance

Food safety is fundamental to the role and is non-negotiable.

You will be required to:

  • Hold a valid Occupational Health Card and recognised food hygiene certification.

  • Follow the Dubai Municipality Food Code and HACCP requirements.

  • Apply Food Code temperature, cooling and holding requirements correctly.

  • Complete all required temperature and food safety records to Foodwatch standard.

  • Maintain halal handling and segregation at all times.

  • Keep all required in-house and food certifications current.

  • Maintain high standards of uniform and personal presentation at all times.
