About The Company
In fall 2012, Chef/Owner Tatsu Aikawa started Ramen Tatsu-Ya with Chef Takuya Matsumoto and younger brother Shion Aikawa. After spending some time at the Michelin-starred kaiseki/sushi bar Urasawa in Los Angeles, Tatsu decided to return to Austin in the pursuit of introducing authentic Japanese ramen to Texas. With the help of friends and family, Ramen Tatsu-Ya became a reality and soon after opening, the shop quickly became a local sensation boasting national accolades, including Bon Appétit’s “Top 50 Best Restaurants.” The Tatsu-Ya Family currently has three Ramen Tatsu-Ya locations in Austin and one in Houston, as well as a new bar concept, Domo Alley-Gato Tatsu-Ya, which opened in Austin in 2018. What is the job?: As a Lead Cook, you will be the backbone of our culinary team, overseeing the preparation and presentation of our dishes while mentoring and guiding kitchen staff. Your expertise and leadership will enhance the quality of our food and the efficiency of our operations, ensuring a memorable dining experience for our guests.

  • Manage Opening and Closing Procedures: Manage the opening and closing tasks for the kitchen to ensure everything is completed and ready for service, including setting up the main station you are working on.
  • Line Checks: Perform line checks every shift to ensure all dishes are prepared to the highest standards and meet safety guidelines.
  • Oversee Kitchen Operations: Supervise daily kitchen operations to ensure efficiency and adherence to company standards, while ensuring all food is prepared according to safety and sanitation standards.
  • Staff Management and Training: Manage and train kitchen staff on proper cooking procedures, presentation, and safety practices.
  • Maintain Cleanliness and Monitor Equipment: Ensure the kitchen and all kitchen equipment are kept to high cleanliness standards while regularly checking for any issues and ensuring proper maintenance.
  • Lead by Example: Demonstrate strong work ethic and professionalism, setting a positive example for the team.
  • Ordering and Inventory Management: Manage ordering and inventory to ensure adequate stock levels and minimize waste.

Requirements

Requirements:

  • Must be 18+ years old.
  • Valid food manager’s certificate.
  • Ability to work in a fast-paced environment and lift 25-50 lbs.
  • Prolonged periods of standing and navigating the kitchen environment.
