Job Description

As our Demi Chef de Partie, you will be passionate and creative in your approach to consistently producing high-quality dishes that delight our guests. Your flexibility in adapting to special requests will contribute to creating memorable dining experiences that will see guests returning time and time again.

Your role will include (but not limited to):

  • Prepare and present food in accordance with hotel premium standards.
  • Supervise, coach and train kitchen team members in conjunction with the Executive Chef and Chef de Cuisine.
  • Maintain the highest standards of quality and freshness in both the ingredients and the preparation of meals.
  • Maintain impeccable hygiene and kitchen standards in line with HACCP requirements.
  • Monitor and control food waste, stock levels, and kitchen resources.
  • Experience with bulk cooking and large-scale food production.
  • Ability to execute and maintain standards across:
    • Pre-plated events
    • Cocktail functions
    • Buffet operations
    • Banqueting and C&E requirements
  • Comfortable managing multiple event requirements simultaneously.

Qualifications

Our ideal candidate will have but not limited to): 

  • Full working rights in Australia.
  • Relevant trade qualifications.
  • Previous experience in a hotel, banquet or high-volume culinary environment.
  • Ability to work effectively in a fast-paced environment, particularly during high-volume periods.
  • Strong organisational skills with the ability to prioritise tasks and meet production deadlines. 
  • High level of attention to quality, consistency, presentation and food safety.
  • A hands-on approach with a strong work ethic and willingness to support the wider Culinary team.
  • Availability to work staggered shifts across the week, including weekends and varying start/finish times, to meet operational demands.
